another with water in the oil.

I have a chris craft catalina 251 with a chevy 350 inboard. Last season I noticed a decent amount of water in my oil, probably about 1 quart. I disassembled the engine down to the block and did not find any cracks on the block. When I removed the heads I found I had some damage to the starboard side head gasket and frozen intake and exhaust valves on the number 4 cylinder. I replaced both heads the entire exhaust and all gaskets, I also added a fresh water cooling system to ease winterizing and hopefully protect the engine in the future. I am about to attempt to start it for the first time and am looking for any advice as to what I should do before turning the key. I have worked on car engines before but not much on marine so I am trying to get it to the point where it will start and then have a pro go over my work and tune it. Also I have read that the stuck valves or a damaged riser could be the culprit with regards to the water in the oil and since I had both of those things I am hoping that is all that is wrong. I did however pop a freeze plug the winter before, the engine was installed in 2001 and has maybe 200 hours on it.
