Salon door stop, need to open past stop

Hi
I have a 2000 Searay 420 AC. My freezer went out. I bought a new one. Same dimensions as old. My problem is, I need 22" to clear the doorway coming into salon. The door opens 20". We see a stop further back on the door track.

Any ideas how to access that stop so the freezers can be traded out?

Seems scary to have to cut into boating to access door track. Do any of you have a better solution?

Can you remove the freezers door ?

We were able to remove this and get to the screw that stops the door. Thankfully this worked. We removed the doors off the old and the new one but still needed 2"
