This weekend we did some speed runs at different RPM settings with a computer attached to the engines, which gave us fuel flow. Speeds from GPS. Below find my chart. Bottom has a few barnacles from the salt-water days and some scum from our winter fresh water. Sundancer is a 2001 340 with 454 MPI engines and 3 blade props.

Yes we adjusted the trim. I have found that I run the tabs down all the time at cruise to lower the bow and to get better performance when heavy (full fuel). With half tanks (700 pounds lighter) we get better speeds and run with less down tab.
 
Hey - I now have some one I can race with my 320 with 350 Mag's and I could win. Your speed numbers look low compared to my 320 with 350 Mag's.
 
I cruise around 3600 rpm's at 25 mph GPS and burn 24 gph. WOT is around 5000 rpm's and is 37 mph at lots of gallons per hour. Can't remember. My boat is 11'5" beam. Seems like your top end is low.

My WOP is 4300 RPM and 32.6 MPH. Your WOP is 5000 RPM at 37 MPH. The 340 might cruise at 37 if it could reach 5000 RPM. The 340 has an 11' 5" beam. Your fuel burn looks low at 3500 RPM.
