I have winterized my boat for the past 12 years except the marina has winterized my engines. I am winterizing my engines this year, how many gallons per engine do I require ?

All that should be needed is draining the raw water side of the heat exchanger and riser/elbows

I strongly suggest putting AF in the raw water side.. Leaving It empty as suggested, the raw water side is still wet and that moisture with air, promotes a lot of rust over the winter. If you go the drained route, next spring, have someone else start up your motor for the first time while you stand near the exhaust. When you see what comes out, you will never do it again.
FWIW, West Marine carries a pink antifreeze designed for use in the raw water side. Made with rust inhibitors…$6.99/gal.

I have 3126 cats and run six gallons through each engine and leave it in I don't drain then after. I have been doing this for the last 15 years. I use 3 gallons in my generator.
