The coring problems in the Sea Rays were probably similar to the problems in the older Carvers, except exacerbated because people were taking the Sea Rays into rougher water where the hull may have flexed more and cracks allowed water in once in awhile.
Cored hulls can be just fine - Sunsation boats uses a fully encapsulated, balsa coring in their go-fasts and the company founders swear by the stuff. And I have to say that my old 2895 and 2896 Carvers never gave me any trouble at all with their hull coring.
Many owners screwed stuff into their hulls and stringers without knowing the consequences of poor sealing, and let water leach into the cores which eventually ruined the boats. I've seen ones where the jackstands went right thru the bottom! A well maintained boat should have no such problems, but one never knows unless you have a good surveyor check it out.
