Encapsulating new deck

I have a 71 30ft Trojan Sea Raider and the original bow was a teak veneer. The original was history long before I acquired it and one of the previous owners put down plywood and did a poor job of covering it with fiberglass cloth. I'm going to replace the bow and gunwales with oak planking. My question is has anyone encapsulated a wood deck with polyester or epoxy resin and left it with the natural looking finish. Fiberglassite recomends using two layers of 6oz cloth over mat. Thoughts anyone?
 
If you use epoxy, you will have to paint it or gelcoat it as the UV will cause unprotected epoxy to break down over time. Polyester is not as UV suseptable. Don't know what it would look like with the glass cloth visable. You may want to paint it with some type of deck paint or Awlgrip with some grit in it for non-skid.
