When I fog my OMC 460 engine for winter I just pour some Marvel mystery oil down the carb (I go slow), the question i have is am I taking a chance with hydrolocking?

I don't think that's possible thru the carb. I also use Marvel Mystery Oil for fogging. I just drilled about 4 or 5 small holes thru cap rather than removing cap completely. This permits me a controlled amount of flow. Squeeze bottle to increse flow as needed.

Short answer is yes. By pouring Marvel Mystery Oil down the carb you increase the chance of hydolocking. The chances of it happening if poured slowly would be slim to none. I prefer to use fogging oil. A spray can of fogging oil will last 10 years. On a large engine you can not kill it by spraying it in; you'll need to have a way to shut off the engine after a 5 second blast or have a helper to turn the key off. The idea is to coat the cylinder walls and valves with oil while the engine is still pumping and shut off the engine before it can be burned off. Marvel Mystery Oil is a good product but I don't think it's the best product to fog an engine.
 
A three wire remote starter/shutdown switch when used in engine room is invaluble while winterizing, especially when working alone.
 
True fogging oil has a sticky component to it and will stick to everything it touches and not just puddle at the bottom. So while MMO is better than nothing its not a great fogging oil. You might try mixing MMO and chain saw bar oil as it has the same type of sticky component to stick to the chain and bar. I just use 2 cans of fogging oil at once down my 4 barrel carb until it stalls.
 
WHy not just buy spray cans of fogging oil for fogging a motor? any neighbor in your marina should be glad to hop on board and turn your key off for you.... right??
