How much battery power for overnight anchoring?

We are doing the Trent-Severn canal trip in June and unlike the Erie Canal which we did last year, the tie up walls have no electricity available. So when we tie up or anchor out we will be on battery power for about 18 hours each day.

We have a 1986 26ft Cruisers that has a separate starting battery and house battery. It also has a two-bank charger with each battery on a bank.

The boat will be running 5-6 hours a day, much of it a just over idling for 6 mph in the canals, faster in the lakes.

My main concern is the refrigerator compressor running on battery for 18 hours even though it is turned down to half power. If I add second battery to the house side, will they both get charged enough during the running time to last over night, and is the charging regulator of the engine getting confused in having to just put charge for a two second start into the starting battery and having to charge almost empty house batteries?

You can tell I'm not a wizard when it comes to engines...
