let's talk anchors again!

Ok, I think i posted about this right before i bought my current boat earlier this spring. I tried finding that thread but the search engine didn't quite dig it up for me!
I have a 3372 Cruisers Yachts boat...37.5' LOA, 12,000 lbs. (+/-). The anchor the boat came with is the Danforth Deepset II, T**II-2500 series. See link below.

This is a 20 lb. anchor that, according to the manufacturers website, will hold a 50' boat in 20 knot winds. This weekend i was out in some 15-17 knot winds (it was blowing pretty good!) and i could not get the anchor to set worth a flip. Never had any problems up until now, but then again, i have not been out in stronger winds like this weekend until now. It seems like the anchor would hold well for me for about 30-45 minutes but then i would start drifing pretty badly with the wind. Later in the day it held good for about an hour or more, i went down to take a nap (wife topside reading a book). When i woke up about 45 minutes later we had drifted to the mouth of the cove...about 200 yards from where i dropped anchor originally (had a discussion with the wife about noticing if we are drifting- lol).

So what gives??? It is my understanding that this is the correct sized anchor and is also the correct type for the type of boating conditions we are in....inland freshwater lake with clay and mud bottom. We usually anchor out at night a lot and now i am worried i will drop anchor, see it holds well for an hour, go to sleep, and wake up to an idiot plowing into the boat in the middle of the lake due to my boat "wandering".
