I have twin 2006 Volvo Penta motors with 750 hours. Call for SAE30 synthetic only. Can't find it anywhere? Any ideas on where? Would 10w30 be OK to use?

I googled SAE 30 synthetic oil and a bunch popped up. You may have to buy it online, but it's readily available.

Quick look showed Sierra & Royal Purple. As it is Volvo, they must have their brand too. Likely others.

I suggest you consider one of the Mobil 1 oils available, different viscosity ranges at least at Walmart.
Originally Crusader manuals specified grade SAE 30 in the Manuals. Subsequently Crusader indicated that multi viscosity oils are acceptable with some specification.
As it was explained to me, they felt that the additives in multi viscosity oil can break down with the oil tending to have the properties of the base oil. Apparently they no longer consider that a problem.
If you boat in an area where the temperatures can get low, I believe that straight 30 oil can cause more engine wear on warm-up unless it does not increase in viscosity as normal oils do. Some Synthetic oils may be better.
I use Mobil 1 oil in both of my 502 Crusaders and they burn less oil with the Mobil 1.

Drove 45 minutes to pick up some Sierra at WM. Got there at 5:02 and was told by kid locking door that they are in "winter hours" and we're closed. They suck.

You have other choices as well. Now Volvo recommends a full syn 10W-40 that they sell, and I bet that you could get it from Amsoil as well.
I like being able to find stuff locally without having to search all over so I'd probably use the Semi Syn Merc 25/40 which I'm sure would be fine in your application.
While Mobil 1 will work in this application, I think using an FC/W rated oil makes sense since they have better corrosion resistance than standard passenger car oils do.

Shell Rotella has single weight oils. I understand what Volvo recommends, but that recommendation is 10 years old and based on 10 year old knowledge and technology. Considering the average boater puts 50-100 hours on their engines between oil changes, I cannot see where a 2016 technology oil even if multi viscosity could hurt.

My 2 cents.
