varnish or stain/varnish for cabin interior

Have found some wood under the wallpaper that, after cleaning and sanding, looks surprisingly great! We are thinking of just refinishing, rather than using a new wall covering.

Suggestions for a stain/varnish product? We'd rather have matte/sating than gloss. We'd like to keep these walls lighter than the salon teak so they are distinctly different. These walls are in the cabins which previously were all wallpaper, as opposed to the salon which is all teak.

I like using oil (Danish or Teak) for interior wood. I think it looks better than varnish and is much easier to apply.

Alk - Yes, we use oil on the teak and are in the process or brightening and oiling some really worn areas in the salon....... Just not sure about this other (unidentified) finish which was originally not meant to be seen. Looks real nice though. Some knots around the corner but even that wall looks great, knots and all.
